Have you ever had Red velvet brownies? Well, today I am going to tell how to make red, rich and fudgy brownies swirled with cheesecake filling.
Ingredients:
- 170g salted butter melted.
- 225g sugar.
- 2 tsp vanilla extract.
- 1 tsp red food colouring.
- 3 eggs.
- 40g cocoa powder.
- 110g plain flour.
- 1 tsp white wine vinegar.
For the cheesecake swirl
- 250g soft cheese.
- 1 egg yolk.
- 3 tbsp sugar.
Method:
- Start by buttering a 20cm square brownie tin and lining it with baking paper. Preheat your oven to 180C/160C fan/gas 4. In a bowl, whisk together the melted butter, sugar, and vanilla extract until combined. Then, slowly whisk in the food colouring and eggs until the mixture turns red.
- Please sift the cocoa powder and flour into the mixture, and then add the vinegar. Fold the mixture together using a spatula. For the cheesecake swirl, combine the cream cheese, egg yolk, and sugar, and set aside.
- After that step, pour most of the brownie batter into the tin. Then, dollop in the cheesecake mixture. Afterwards, pour the rest of the brownie batter on top. Use a skewer to lightly swirl the two together. Bake for 30 minutes until shiny on top. After baking, remove from the oven and cool in the tin for 30 minutes. Finally, remove it to a wire rack and it is ready to eat!
